  • Ribal Sibaee is the visionary behind 963, Berlin’s pioneering third-culture restaurant redefining Levantine cuisine through bold creativity, borderless dining, and emotional storytelling. With over two decades of experience as a global marketing executive—shaped at leading agencies like BBDO—Ribal’s instinct for brand-building and cultural resonance has always been driven by narrative integrity.

    Born to Syrian parents, raised in Saudi Arabia, and holding American nationality, Ribal’s identity is layered and cross-cultural. It’s this deeply personal lens that informs the soul of 963: a culinary home for the in-between, where flavors, memories, and migrations are celebrated on the plate.

    963 is more than a restaurant—it’s a statement. It breaks the mold with inventive dishes that honor heritage without being confined by it. Ribal’s approach to hospitality is deeply intentional: high-touch yet warm, poetic yet precise. Every element of 963—from its name (the Syrian country code) to its evolving, globally-influenced menu—tells a story of movement, belonging, and reinvention.

    After successfully turning around multiple F&B concepts across markets, Ribal founded Fortis Food & Beverage to house his creative ventures. But 963 remains his flagship, his heart project—a modern table where the diaspora is not only remembered, but reimagined.

As Executive Chef of 963, his cuisine draws not only from a deep-rooted Levantine heritage, but from a lifelong passion for the stage—resulting in dishes that are both technically masterful and emotionally resonant.

    Raised in a family where food was a sacred act of connection, Mohamad inherited a profound respect for Arabic culinary tradition. But it’s his background in theatre that gives his cooking its unmistakable signature: dramatic, layered, and expressive. At 963, each dish is composed like a scene—carefully staged, sensorially rich, and always anchored in narrative.

    For Mohamad, cooking is not just craft—it’s performance. Whether reimagining a street snack into fine dining form or infusing a forgotten childhood flavor into a contemporary plate, his creations invite guests into an experience that’s equal parts memory and spectacle.
